Berry Pancake Recipe

Enjoy these pancakes for a special breakfast.


Ingredients:

1 cup plain flour
1 teaspoon baking powder
1 cup sugar
1 cup milk
1 egg
1/2 cup caster sugar
1/2 cup frozen berries, thawed

Method:

Stir all ingredients together thoroughly in a large bowl.

Add 1 tablespoon of butter to a large preheated (medium heat) frying pan. 

Spoon heaped desert spoons of batter into the pan (one in the centre and about six around the outside). 

Wait about three minutes until bubbles form all over the surface of pancakes. Use a spatula to turn them all over. Continue to cook for about three minutes and remove from pan.

Add more butter to the pan and continue cooking with the rest of the batter.

Serve with butter, lemon and sugar, ice cream or maple syrup.
