Strawberry and White Chocolate Muffin Recipe

A free recipe for a delicious and easy snack or dessert.


Dry Ingredients:
1 1/4 cups self-raising flour
1/2 cup sugar
2 tablespoons custard powder
1/2 cup white chocolate melts
1 cup frozen strawberries

Wet Ingredients:
50 grams unsalted butter, melted
1 egg
3/4 cup milk

Preheat the oven to 200 degrees Celsius. Line a 12 hole muffin tray with paper cases.

Stir all the dry ingredients together in a large bowl.

In a smaller bowl, whisk together the wet ingredients and then add them to the dry ingredients.
Stir until just combined.

Divide the mixture between the paper cases and bake for 15-20 minutes or until the centres spring back when pressed.

As soon as the muffins come out of the oven, place a white chocolate melt on each. 




Apple Crumble Recipe

A very easy recipe for a family favourite


Filling ingredients:
10 grams unsalted butter
4 apples
1/4 cup sultanas
1 teaspoon cinnamon
1/3 cup sugar

Crumble ingredients:
50 grams unsalted butter
1/2 cup self raising flour
1/2 cup traditional oats
1/2 cup desiccated coconut
1/2 cup sugar

Method:
Peel and dice the apples. Heat the butter in a saucepan and add the apples, sultanas, cinnamon and sugar. Cook for 15 minutes on low heat, with the lid on, stirring occasionally.

In the meantime, you can make the crumble. Melt the unsalted butter in the microwave. Stir in the flour until combined. Stir in the oats, coconut and sugar. Set aside.

Spoon the cooked apples into 6-8 ramekins or one pie dish. Spoon the crumble mixture on top.

Bake at 180 degrees for 15 minutes if you are using ramekins, or 30 minutes if you are using one pie dish.

Serve hot with cream.

Coconut Macaroons Recipe

These delightfully chewy biscuits are gluten free and very low fat. Enjoy a batch today. 


1 egg white
1/2 cup icing sugar
Dash vanilla extract
1/2 cup desiccated coconut

Preheat the oven to 180 degrees Celsius. Line a biscuit tray with baking paper.

Beat the egg white with the electric mixer for 2 minutes. Add the icing sugar and beat for 2 more minutes.

Stir in the vanilla extract and desiccated coconut until just combined.

Scoop heaped tablespoons of mixture onto the biscuit tray. Bake for 15 minutes.

Makes 8.

Raspberry and Coconut Muffins

You could be eating these lovely muffins in under half an hour! Just follow the quick and easy recipe below.


Ingredients:

1 cup plain flour
1\2 cup desiccated coconut
1 1/2 teaspoons baking powder
3/4 cup brown sugar
1 cup frozen raspberries
50 grams unsalted butter, melted
3/4 cup milk
1 egg
1/2 teaspoon vanilla extract

Method:

Preheat the oven to 200 degrees Celsius. Line a 12 hole muffin tin with paper cases.

Combine the flour, coconut, baking powder, sugar and raspberries in a large bowl.

In a smaller bowl, beat together the butter, milk, egg and vanilla with a fork.

Add the wet mix to the dry mix and stir with a spoon until just combined.

Divide the mixture between the 12 muffin cases. Bake for 15-20 minutes, or until the centres spring back when pressed.

Apple Loaf Recipe

Quick and easy to make, this delicious loaf is best served warm with butter.



Loaf ingredients:

1 1/2 cups plain flour
1 1/2 teaspoons baking soda
1/2 teaspoon cinnamon
1/2 cup caster sugar
1 apple, peeled and finely chopped. 
2 tablespoons oil
2 eggs, beaten
3/4 cup milk

Topping ingredients:

1 apple, peeled and finely sliced
1 tablespoon sugar
1 teaspoon cinnamon

1.
 Preheat the oven to 200 degrees Celsius. Oil and line a loaf tin with baking paper.

2.
Place all the ingredients in a large bowl and stir until just combined. 

3.
Spoon into the loaf tin. 

4.
Top with the sliced apple. Stir together the cinnamon and sugar in a mug, then sprinkle over the top of your loaf.

5.
Bake for 30 minutes or until the centre springs back when pressed.

Lemon Cheesecake Recipe

This is a perfect recipe to make the day ahead of a special occasion.


Crust

1 cup plain flour
1 teaspoon baking powder
1 cup caster sugar
125 g butter, melted
1 cup desiccated coconut

1.
Preheat the oven to 180 degrees Celsius. Line a 20 cm round cake tin with baking paper (including the sides).

2.
Place all the ingredients in a large bowl and mix until well combined.

3.
Press the mixture into the base and up the sides of the cake tin.

4.
Place in the oven and bake for 10 minutes. While the crust is baking, start working on the filling.


Filling

500 g cream cheese, softened
3/4 cup caster sugar
Juice of 2 lemons
Grated rind of 2 lemons
3 eggs

1.
Preheat the  oven to 150 degrees Celsius. 

2.
With an electric mixer, beat the cream cheese, sugar and lemon rind together until smooth. 

Add the eggs, beating until combined. Add the lemon juice and beat for a further minute. Pour the mixture onto the crust.

3.
Bake for 50 minutes or until the filling is just set. Cool with a tea towel over the tin, to prevent cracks. Place the cake in the fridge until cold. 

Sift the cake with icing sugar and serve with cream.

Egg Free Recipe - Chocolate and Nut Cupcakes

This recipe is quick and easy to prepare and cook, it is also egg free. By adding cream in place of eggs, the cakes have a lovely gooey texture.


Ingredients:

1 cup plain flour
1 teaspoon baking powder
3/4 cup caster sugar
2 tablespoons cocoa powder
1/3 cup chopped peanuts
3 tablespoons butter, softened
1/2 cup milk
4 tablespoons thickened cream

Method:

Preheat the oven to 180 degrees Celsius. Line a Texas muffin tin* (makes 6 large muffins) with two strips of baking paper, crossing over in the centre. 

Place all the ingredients in a large bowl and stir until just combined. Divide the mixture evenly among the six-hole muffin tin. 

Bake for 20 minutes. Allow to cool for 10 minutes and then remove from the tin to cool completely.

*Note: If you do not have a Texas muffin tin, just use a 12-hole muffin tin and reduce the cooking time to 15 minutes.


Ingredients:

1/2 cup chocolate chips
2 tablespoons crunchy peanut butter
1/2 cup thickened cream

Method:

1.
Half fill a small saucepan with water and place it on the stove. Allow the water to simmer.

2.
Place a ceramic bowl over the saucepan. Add chocolate chips and crunchy peanut butter to the bowl. Stir this until it melts.

3.
Remove from the saucepan and stir in thickened cream.

4.
Spread over your cupcakes.

Banana and Chocolate Cookies Recipe

Makes 14 delicious banana biscuits.


Ingredients:
125 grams unsalted butter, melted
1 very ripe banana, mashed
2 eggs, beaten
1 1/2 cups wholemeal flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup sugar
2 tablespoons honey
1 cup rolled oats
1 cup chocolate chips
1/2 cup walnuts, chopped

Method
Preheat the oven to 200 degrees Celsius. Line two trays with baking paper.

Combine all the ingredients in a large bowl. Stir until combined.

Place heaped tablespoons of mixture onto the baking trays (evenly spaced). 

Bake for 12 minutes or until they are golden brown.

Mini Wedding Cakes with Raspberry Coulis

As a first anniversary gift for my husband I made a replica of our wedding cake, which was a White Chocolate Mud Cake served with Raspberry Coulis. Instead of a large cake I made 12 cupcakes and you can too...


Here is the recipe I used for the white chocolate cupcakes.

Here is a great recipe for white chocolate icing.

MICROWAVE RASPBERRY COULIS RECIPE

Ingredients:
300 grams frozen raspberries
1/3 cup caster sugar

Method:
Place the sugar and raspberries in a large microwave safe bowl and stir.

Cook in the microwave for 2 minutes and then stir.

Cook in the microwave for a further 2 minutes and then stir.

Return to the microwave for a further 2 minutes and stir.

Place a sieve over a medium sized bowl and pour in the raspberry mixture. Use the back of a spoon to push the liquid through (leaving the raspberry seeds in the sieve).

Serve drizzled on your white chocolate mud cakes.

Keeps in the fridge for 3 days.

Oat and Raisin Cookies (Recipe)



Makes 24

Ingredients:
2/3 cup sugar
100 grams unsalted butter, melted
1 egg
1/2 teaspoon vanilla extract
3 tablespoons custard powder
1 1/4 cups plain flour
1/2 teaspoon baking powder
1/2 cup rolled oats
2/3 cup raisins
1 tablespoon milk (if needed)

Method:
Preheat oven to 160 degrees Celsius (320 Fahrenheit). Line 2 biscuit trays with baking paper.

In a large bowl, mix together the butter and sugar. Beat in the egg and vanilla with a fork. Set aside. 

Place remaining  ingredients in a medium sized bowl and stir to combine. Add to the butter mixture. Add some milk if the mixture is too crumbly. 

Roll the mixture into tablespoon sized balls and place on the biscuit trays, allowing room to spread. Bake for 20 minutes or until golden brown.

Easiest Apple Pie Recipe

This is a great make-ahead dessert. You can the apple mixture a day before serving.

Ingredients:
5 granny smith apples
1/2 cup sugar
1/2 cup sultanas
1 teaspoon ground cinnamon
 sheets puff pastry
1 egg, beaten
Sugar to decorate

Method:
Peel your apples. Cut them into a 1 cm dice. Add them to a medium sized saucepan, along with the remaining ingredients.

Place the stove on medium to low heat. Cook for 20 - 30 minutes, stirring occassionally. Allow to cool and then place the mixture in the fridge until you need it.

Preheat the oven to 190 degrees celcius. Line oven trays with baking paper.

Cut each sheet of puff pastry into 4 squares.

Place a spoonful if apple mixture on the pastry, brush the edge with egg and fold in half to make a triangle. 

Press the edges closed with a fork. Brush the top with egg and sprinkle with sugar. 

Pierce some holes in the top with a fork.

Place on the oven tray. Bake for 15 minutes or until the pastry is puffed and golden.

Serve with cream.

Banana Upside Down Cake Recipe

Caramel and bananas. Yum!

Ingredients:
80 grams unsalted butter
1/2 cup brown sugar
1/2 teaspoon cinnamon

2 bananas, sliced

80 grams unsalted butter
1 cup caster sugar
2 eggs
Dash vanilla extract

1 cup plain flour
1/2 cup dessicated coconut
1 teaspoon baking powder
1/2 cup milk

Method:
Preheat oven to 180 degrees. Line a 20 cm cake tin with baking paper.

Melt butter, brown sugar and cinnamon together in the microwave for 1:30. 
Pour this mixture into the bottom of the cake tin.

Arrange banana slices in the cake tin.

Cream the unsalted butter and caster sugar in a large bowl. Beat in eggs. Add vanilla.

Gently stir in flour, coconut, baking powder and milk.

Pour into cake the tin. 

Bake for 50 minutes, or until a skewer comes out clean. Serve with cream.

Peanut Butter Cupcakes with Strawberry Icing

Peanut butter and jelly is a classic combination. Try this recipe for deliciously nutty cupcakes with strawberry jam icing.

Cupcakes

Ingredients:
80 grams unsalted butter, softened
1/2 cup peanut butter, softened
1 cup caster sugar
2 eggs
1/4 teaspoon vanilla extract
1 cup plain flour
1 teaspoon baking powder
1/4 cup milk

Method:
Preheat the oven to 180 degrees celsius. Line a 12 hole muffin tin with paper cases.

In a large bowl, beat together the butter, peanut butter and caster sugar with electric beaters or a fork.

Beat in eggs, one at a time. Add vanilla extract.

Sift in half the flour and stir with a spoon. Add the milk and stir. Sift in remaining flour.

Bake in the oven for 20 minutes or until golden brown and the centres spring back when pressed.

Icing

Ingredients:
80 grams unsalted butter, softened
1/4 teaspoon vanilla extract
1/4 cup strawberry jam
2 1/2 cups icing sugar
1 tablespoon milk

Method:
In a large bowl, beat together the butter, vanilla extract and strawberry jam with electric beaters or a fork.

Sift in the icing sugar and stir, adding the milk as you go.

Spread over cupcakes when they are cool. Enjoy!

Blueberry Slice Recipe

A creamy slice with a biscuit base.

Ingredients:

1 1/2 cups plain flour
1/2 cup caster sugar
150 grams unsalted butter, melted
Grated zest of 1 lemon

400 ml tin of  sweetened condensed milk
1 egg, beaten
Juice of 1 lemon
1 cup blueberries
2 tablespoons plain flour
1 teaspoon baking powder

Method:

Line a 20 cm square baking dish with baking paper. You could also use a round cake tin if you like.

Preheat oven to 180 degrees celcius.

Stir together first 4 ingredients and press evenly into the baking dish. Bake for 15 minutes.

In a medium sized bowl, coat blueberries in flour and baking powder.

Whisk together the remaining ingredients in a large bowl. Stir in the blueberries and flour.

Pour onto the crust and bake for 15 minutes or until set when shaken.

Cool for at least one hour.

Cut into pieces and serve.

Muesli Biscuits - A Low Sugar Recipe

These yummy biscuits are so good warm, just out of the oven.

Ingredients:

1 1/4 cups wholemeal plain flour
1 cup muesli
1/2 cup low G.I. sugar
3/4 cup desiccated coconut

2 tablespoons honey
150g unsalted butter, chopped
1/2 teaspoon bicarb soda
1 1/2 teaspoons warm water

Method:

Preheat oven to 170 degrees celsius. Line two biscuit trays with baking paper.

Place the dry ingredients in a large bowl and stir to combine. 

In a microwave-safe bowl, place the honey and butter. Cook in one minute intervals in the microwave, until the butter is melted. 

Combine the bicarb soda with the warm water in a mug. Add to the butter and honey mixture. It will go bubbly.

Pour the honey mixture into the dry ingredients and mix together until fully combined. Roll the mixture into tablespoon-sized balls and place on the baking trays. Press down on the tops to flatten slightly. 

Bake for 12 minutes or until golden brown.

No-Bake Chocolate Cake Recipe

This recipe is so easy. No oven required.

Ingredients:
300ml thickened cream
Dash vanilla
Packet of chcolate ripple biscuits
3/4 cup strawberry jam
4 squares of chocolate, grated
1/2 punnet strawberries, hulled

Method:
Pour cream into a large bowl, add a dash of vanilla. Beat with electric beaters until whipped (3-5 minutes). 

Place a dinner plate on the bench. Cover the base of the plate in a layer of whipped cream. 

Open the biscuit packet. Pour jam into a bowl. Dip a biscuit into the jam. Use a knife to cover it in cream, stand it on the plate. Continue making a ring shaped cake. See diagram below.


When the ring is complete. Cover everything with cream and smooth with the back of a butter knife. Place the strawberries in the centre and sprinkle with grated chocolate. Place the cake in the fridge for 6-8 hours to soften. Enjoy!

Blueberry Muffins Recipe


WET INGREDIENTS
90 grams melted butter
2 eggs
Dash vanilla extract
1/2 cup milk

DRY INGREDDIENTS
1 cup frozen blueberries
1/2 cup sugar
1 1/2 cups plain flour
1 1/2 teaspoons baking powder

METHOD
Preheat the oven to 200 degrees celsius. Line a 12 hole muffin tray with strips of baking paper. Set aside.

Place the wet ingredients in a medium sized bowl. Beat together with a fork. Set aside.

Place the dry ingredients in a large bowl. Stir with a spoon. 

Stir the wet ingredients into the dry ingredients until just combined. 

Divide your mixture between the muffin holes and bake in the oven for 12-15 minutes, or until the centre springs back when pressed.

Easy Chicken and Egg Pie Recipe

A quick and tasty meal. 

1 sheet frozen puff pastry, thawed
1/2 cup mozzerella cheese
2 chicken breasts
2 tablespoons basil pesto
1 capsicum
1 onion
3 eggs
Salt and papper

Preheat the oven to 200 degrees celcius.

Line a round dish with baking paper. Place pastry in dish. Sprinkle mozzerella over base of pastry.

Chop onion, capsicum and chicken. Place in a pre-heated frying pan with pesto, salt and pepper. Fry until ccoked. Cool for a few minutes.

Spoon chicken mixture onto the pastry. Crack eggs on top. Loosely fold pastry edges in.


Bake in the oven for about 30 minutes or until the pastry looks golden brown.

Banana and Chocolate Muffins Recipe

Dry Ingredients:
1 cup plain flour
1/2 cup rolled oats
1 1/2 teaspoons baking powder
1/3 cup baking chocolate, chopped
2 tablespoons brown sugar

Wet Ingredients:
2 ripe bananas
2 tablespoons oil
3/4 cup milk
1 egg
Dash vanilla extract

Method:
Preheat the oven to 200 degrees celcius. Line a 12 hole muffin tin with paper cases. Set aside.

In a large bowl, combine all the dry ingredients and stir with a spoon. Set aside.

In a medium bowl, mash the bananas with a fork and add remaining wet ingredients. Beat with  a fork.

Add wet ingredients to the dry and stir with a spoon until just combined.

Divide mixture evenly between paper cases. Bake for 15 minutes or until the centre springs back when pressed.

Rocky Road Recipe

Here is a recipe for a no-bake slice. Perfect for summer when you want a sweet treat and not the heat from the oven!

Ingredients:
1 cup dark cooking chocolate
1/2 cup dried cranberries
1/2 cup walnuts, chopped
1/2 cup marshmellows, chopped
1/2 cup dessicated coconut

Method:

Line a baking tray with baking paper. Set aside.

Place cranberries, walnuts, marshmellows and coconut in a large bowl. Set aside.

Take a small saucepan and fill it one third of the way with water. Place it on the stove and bring to a simmer. 

Place a bowl on top of the saucepan and add chocolate. Stir constantly until chocolate is melted.

Pour melted chocolate into the bowl full of your other ingredients and stir with a spoon.

Pour mixture onto the tray and spread out roughly. Place in the fridge until set and then cut into pieces.
