Ingredients:
1 cup wholemeal flour
1/2 cup desiccated coconut
1 1/2 teaspoons baking powder
2 tablespoons low G.I. sugar
2 ripe bananas
2 tablespoons extra virgin olive or coconut oil
3/4 cup milk
1 egg
1/2 teaspoon vanilla extract
Method:
Preheat oven to 200 degrees celcius. Spray a 12 hole muffin tin with oil.
In a large bowl, stir together flour, coconut, baking powder and sugar.
In a smaller bowl, mash bananas with a fork. Beat in the egg, then the oil, then the milk and vanilla.
Add the banana mixture to the dry ingredients. Stir with a spoon until just combined.
Divide mixture evenly between the 12 muffin holes.
Bake for 20 minutes.
