Dry Ingredients:
1 cup plain flour
1/2 cup rolled oats
1 1/2 teaspoons baking powder
1/3 cup baking chocolate, chopped
2 tablespoons brown sugar
Wet Ingredients:
2 ripe bananas
2 tablespoons oil
3/4 cup milk
1 egg
Dash vanilla extract
Method:
Preheat the oven to 200 degrees celcius. Line a 12 hole muffin tin with paper cases. Set aside.
In a large bowl, combine all the dry ingredients and stir with a spoon. Set aside.
In a medium bowl, mash the bananas with a fork and add remaining wet ingredients. Beat with a fork.
Add wet ingredients to the dry and stir with a spoon until just combined.
Divide mixture evenly between paper cases. Bake for 15 minutes or until the centre springs back when pressed.
