Apple and Almond Muffins

A low sugar recipe for yummy muffins

Ingredients:
1 cup wholemeal flour
1/2 cup almond meal
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
2 tablespoons low G.I. sugar
1 apple
1 egg
2 tablespoons oil
3/4 cup milk

Method: 
Preheat oven to 200 degrees celcius. Line a 12 hole muffin tin with paper cases.

In a large bowl, stir together flour, almond meal, baking powder, cinnamon and sugar.

In a smaller bowl, grate the apple. Beat in the egg, then the oil, then the milk.

Add the apple mixture to the dry ingredients and stir until just combined.

Divide mixture between muffin cases and bake for 15 minutes.

If you like, you can ice these with vanilla icing. I made melted butter icing with about 100g melted butter, about 1 cup sifted low G.I. Icing sugar and a dash of vanilla extract mixed together.
