Fruit and Almond Loaf Recipe

A quick and easy melt and mix recipe
1 cup mixed dried fruit 
50 grams unsalted butter 
1 cup brown sugar 
1 cup water 
2 beaten eggs 
1/2 cup chopped slivered almonds  
2 cups plain flour 
2 teaspoons baking powder 
Icing sugar to dust 

Preheat oven to 180 degrees Celsius. Line a 22 cm loaf tin with baking paper. 

Place fruit, butter, sugar and water in a bowl. Microwave for 2 minutes and 30 seconds. Remove and set aside to cool. 

Meanwhile, in a large bowl, stir together almonds, flour and baking powder. 

Stir eggs into wet mix. Add wet mix to dry and stir until just combined. 

Pour into loaf tin and bake for 25 minutes or until a skewer poked into the centre comes out clean.

Remove from the oven and allow to cool. Sift icing sugar over the top before serving.
