Healthier Chocolate Muffins

A chocolate fix without too much sugar or fat.

1 cup wholemeal flour
1/2 cup desiccated coconut
1/2 cup oats
2 teaspoons baking powder
2 tablespoons cocoa
1/2 cup low G.I. sugar
1 egg
1 cup milk
1/4 cup oil
Dash vanilla extract.

Preheat oven to 180 degrees celcius. Line a twelve hole muffin pan with paper cases.

Mix together dry ingredients in a large bowl. Set aside.

In a smaller bowl, mix togther wet ingredients. 

Add the wet ingredients to the dry and stir until just combined.

Divide the mixture evenly between the muffin pans and bake for 15-20 minutes.
