Lemon Muffins Recipe

Yummy lemon muffins with added muesli
1 cup plain flour
1 cup toasted muesli
2 teaspoons baking powder
Grated rind of 2 lemons
1/2 cup sugar

1 egg
1/4 cup oil
Juice of 1 lemon
3/4 cup milk

Preheat oven to 200 degrees celcius. Line a 12 hole muffin tin with paper or silicone cases.

In a large bowl, stir together the dry ingredients. Set aside

In a smaller bowl, beat together the wet ingredients with a fork.

Add the wet ingredients to the dry and stir with a spoon until just combined.

Divide mixture evenly between the 12 hole muffin tin. 

Bake for 15-20 minutes. You will know they are done when the centre springs back when pressed.

Serve with fruit and sifted with icing sugar.
