Chocolate Chai Cake


Chai syrup:
Chai tea bag
1/2 cup boiling water
4 tablespoons caster sugar

Place tea bag in a mug, pour in boiling water, add sugar. Stir and steep for 3 minutes. Throw away teabag and set aside mug.

Cake:
1 3/4 cups plain flour
1/4 cup cocoa powder
2 teaspoons baking powder
1/4 teaspoon cinnamon
1/2 cup caster sugar
1/4 cup oil
2 small eggs
1 cup milk
1/4 teaspoon vanilla extract

Preheat oven to 180 degrees celsius. Line an 18 cm round cake tin with baking paper.

Stir together dry ingredients in a large bowl.

In a smaller bowl, beat together remaing ingredients with a fork. Add to dry ingredients and stir with a spoon until just combined.

Pour into the cake tin and bake in the oven for 45 minutes or until a skewer comes out clean when inserted in the centre.

Icing:
200 mls cream
1/4 teapoon vanilla
Tablespoon caster sugar
1 tablespoon cocoa powder

Beat together cream, vanilla and sugar until light and fluffy with electric beaters.

Spread onto cooled cake. Sift cocoa over the top.
