Easy Chicken and Egg Pie Recipe

A quick and tasty meal. 

1 sheet frozen puff pastry, thawed
1/2 cup mozzerella cheese
2 chicken breasts
2 tablespoons basil pesto
1 capsicum
1 onion
3 eggs
Salt and papper

Preheat the oven to 200 degrees celcius.

Line a round dish with baking paper. Place pastry in dish. Sprinkle mozzerella over base of pastry.

Chop onion, capsicum and chicken. Place in a pre-heated frying pan with pesto, salt and pepper. Fry until ccoked. Cool for a few minutes.

Spoon chicken mixture onto the pastry. Crack eggs on top. Loosely fold pastry edges in.

Bake in the oven for about 30 minutes or until the pastry looks golden brown.
