Banana Upside Down Cake Recipe

Caramel and bananas. Yum!

80 grams unsalted butter
1/2 cup brown sugar
1/2 teaspoon cinnamon

2 bananas, sliced

80 grams unsalted butter
1 cup caster sugar
2 eggs
Dash vanilla extract

1 cup plain flour
1/2 cup dessicated coconut
1 teaspoon baking powder
1/2 cup milk

Preheat oven to 180 degrees. Line a 20 cm cake tin with baking paper.

Melt butter, brown sugar and cinnamon together in the microwave for 1:30. 
Pour this mixture into the bottom of the cake tin.

Arrange banana slices in the cake tin.

Cream the unsalted butter and caster sugar in a large bowl. Beat in eggs. Add vanilla.

Gently stir in flour, coconut, baking powder and milk.

Pour into cake the tin. 

Bake for 50 minutes, or until a skewer comes out clean. Serve with cream.
