A creamy slice with a biscuit base.
1 1/2 cups plain flour
1/2 cup caster sugar
150 grams unsalted butter, melted
Grated zest of 1 lemon
400 ml tin of sweetened condensed milk
1 egg, beaten
Juice of 1 lemon
1 cup blueberries
2 tablespoons plain flour
1 teaspoon baking powder
Line a 20 cm square baking dish with baking paper. You could also use a round cake tin if you like.
Preheat oven to 180 degrees celcius.
Stir together first 4 ingredients and press evenly into the baking dish. Bake for 15 minutes.
In a medium sized bowl, coat blueberries in flour and baking powder.
Whisk together the remaining ingredients in a large bowl. Stir in the blueberries and flour.
Pour onto the crust and bake for 15 minutes or until set when shaken.
Cool for at least one hour.
Cut into pieces and serve.
