Oat and Raisin Cookies (Recipe)



Makes 24

Ingredients:
2/3 cup sugar
100 grams unsalted butter, melted
1 egg
1/2 teaspoon vanilla extract
3 tablespoons custard powder
1 1/4 cups plain flour
1/2 teaspoon baking powder
1/2 cup rolled oats
2/3 cup raisins
1 tablespoon milk (if needed)

Method:
Preheat oven to 160 degrees Celsius (320 Fahrenheit). Line 2 biscuit trays with baking paper.

In a large bowl, mix together the butter and sugar. Beat in the egg and vanilla with a fork. Set aside. 

Place remaining  ingredients in a medium sized bowl and stir to combine. Add to the butter mixture. Add some milk if the mixture is too crumbly. 

Roll the mixture into tablespoon sized balls and place on the biscuit trays, allowing room to spread. Bake for 20 minutes or until golden brown.
