Easy Caramel Cake

An easy melt and mix cake.



Ingredients:


200 grams unsalted butter
1 cup water

4 tablespoons cocoa
2 teaspoons baking powder
2 cups caster sugar

2 eggs
1/2 cup milk
1/2 teaspoon vinegar
1/2 teaspoon vanilla extract

1 teaspoon bi-carb soda


Method:


Preheat oven to 180 degrees Celsius (fan forced). Grease 18 cm round cake pan.

Large bowl: sift flour, baking powder, cocoa and sugar. Stir.

Second bowl: whisk together eggs, milk, vinegar and vanilla with a fork.

Third bowl: cut butter into large dice and add water. Microwave for one minute. Stir. Microwave for another minute. 

Add bi-carb soda to hot butter mix and watch it fizz! Stir in egg mixture. 

Add wet mix to dry and stir to combine.

Bake for 40 minutes or until a skewer inserted into the centre comes out clean. Cool.


Caramel Icing



100 grams unsalted butter
1/4 cup white chocolate buttons
1/2 cup brown sugar
1 1/2 cups icing sugar

Melt first three ingredients together in the microwave, stirring after one minute.

Sift in icing sugar. 

Pour over cake
