1 cup plain flour
1 teaspoon baking powder
1 cup caster sugar
2 tablespoons desicated coconut
Grated rind of 2 lemons
1/2 cup milk
50 grams melted butter
Juice of 2 lemons
1/4 cup caster sugar
Preheat oven to 180 degrees celcius. Line 18 cm round cake tin with baking paper.
Stir dry ingredients together in a large bowl.
Stir wet ingredients together in a smaller bowl.
Add wet ingredients to the dry and mix until just combined.
Stur syrup ingredients together a bowl and set aside.
Pour mixture into cake tin and bake for about 35 minutes, or until a skewer inserted into the centre comes out clean.
Remove cake from the pan, place on a plate and prick all over with a skewer.
Pour syrup over cake.
It will appear there is too much syrup for the cake but the cake absorbs it all!
