Muesli Biscuits - A Low Sugar Recipe

These yummy biscuits are so good warm, just out of the oven.

Ingredients:

1 1/4 cups wholemeal plain flour
1 cup muesli
1/2 cup low G.I. sugar
3/4 cup desiccated coconut

2 tablespoons honey
150g unsalted butter, chopped
1/2 teaspoon bicarb soda
1 1/2 teaspoons warm water

Method:

Preheat oven to 170 degrees celsius. Line two biscuit trays with baking paper.

Place the dry ingredients in a large bowl and stir to combine. 

In a microwave-safe bowl, place the honey and butter. Cook in one minute intervals in the microwave, until the butter is melted. 

Combine the bicarb soda with the warm water in a mug. Add to the butter and honey mixture. It will go bubbly.

Pour the honey mixture into the dry ingredients and mix together until fully combined. Roll the mixture into tablespoon-sized balls and place on the baking trays. Press down on the tops to flatten slightly. 

Bake for 12 minutes or until golden brown.
