Coconut Macaroons Recipe

These delightfully chewy biscuits are gluten free and very low fat. Enjoy a batch today. 

1 egg white
1/2 cup icing sugar
Dash vanilla extract
1/2 cup desiccated coconut

Preheat the oven to 180 degrees Celsius. Line a biscuit tray with baking paper.

Beat the egg white with the electric mixer for 2 minutes. Add the icing sugar and beat for 2 more minutes.

Stir in the vanilla extract and desiccated coconut until just combined.

Scoop heaped tablespoons of mixture onto the biscuit tray. Bake for 15 minutes.

Makes 8.
